Today i want to share with u another pancake recipe :). Well, pancakes are my son favorite food, so u will see a lot of pancake recipes (with different flavor of course)? in my blog. So today is ‘purple pancake’ heheh..as my son named it. Yeah…i got a leftover blueberry filling in my fridge, that’s why i made this :D. Here the recipe…
1/4 cup blueberry filling
- 2 eggs
- 1 cup milk
- 150g self rising flour, sifted
- 25g ground almonds
- 1 tbsp caster sugar
- pinch of salt
- 1 tbsp oil
- butter, for frying
- 50g toasted flaked almonds, for serving
- Whipped cream, for serving
In a medium size bowl, beat the eggs & half the milk.
Mix in the flour, ground almond, oil, sugar & salt. Add the remaining milk & blueberry filling.
Stir the mixture well until it makes a thick batter.
Heat the knob (pat) of butter in a non-stick frying pan. Spoon the pancake mixture into the pan in heaps, allowing room for them to spread. When the pancake are lightly browned underneath & bubbling on top, flip them over to cook the other side. Make more pancakes in the same way.
Spoon the whipped cream on to the pancakes & decorate with flaked almonds.
